Pork and Apple Meatballs

Balls. The other white meat.
Meatballs are the perfect food. I don't even want to know somebody who doesn't like meatballs. If you're a vegetarian, surely you enjoy meatless meatballs, right? It's a universal food.
This version uses pork and apples, with a bit of mustard and onion for extra flavor. Also? The fruits and vegetables make them healthy, too. #winning

Serves four, or three drunk people.

Ingredients

1 onion, peeled and finely diced
4 small apples, peeled and finely diced
4 garlic cloves, peeled and minced
Olive oil or butter
1 tablespoon finely chopped fresh sage (or 1.5 tsp of dried)
2 teaspoons finely chopped fresh thyme (or 1 tsp of dried)
1 tablespoon dijon mustard
Salt and pepper
Two pounds ground pork
Two eggs
1 cup panko breadcrumbs


Instructions



In small a pan coated lightly with oil or melted butter, saute the onion and apples for two minutes, until softening. Add the garlic and stir for another minute until everything begins to brown. Remove from heat and scrape into a large mixing bowl.


Preheat the oven to 400.


After the mixture has cooled to a handleable temperature, add herbs, mustard, salt and pepper. Add pork and eggs, mix with clean hands. Add panko breadcrumbs and continue to combine with fingers until the mixture holds together.
Form into 24 - 32 balls (depending on how large you like your balls and how much patience you have forming balls.)

Place balls into a heavy roasting pan and roast until thoroughly cooked, turning occasinally. A cooked meatball will be firm when pressed with the back of a spoon. Or you can cut one open to test for doneness. Cooking will take between 20 and 30 minutes, depending on the size of your balls.
